Known as gorrín, cochinillo or lechón, the suckling pig usually weighs 6-8 kilos. It is normally roasted whole in a wood-fired oven. The crispy skin hides a deliciously tender, juicy meat inside. It is served in generous portions and accompanied with a simple lettuce and onion salad.
